4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups of whole milk (2% is good too)
1 pound of dried dry mini-penne
8 ounces grated Italian cheese (Romano, Mozzarella, Asiago or Fontina)
1/3 cup grated fresh parmesan cheese
1 tablespoon dried Italian seasoning
Bring a large pot of water to a boil, salt it, cook the pasta according to the directions for use, al dente. Drain the pasta once cooked and set aside. Work on the next step while cooking your pasta.
Meanwhile, in medium saucepan over medium heat, melt butter, add flour and seasoning to Italian and whisk for about 2 minutes to cook "flour-y" flavor. Add the milk and continue whisking occasionally, letting the mixture thicken. Add cheese and whisk until completely combined.
Pour the cheese sauce over the pasta and then mix them. The sauce will thicken when seated.
