4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups of whole milk (2% is good too)
1 pound of dried dry mini-penne
8 ounces grated Italian cheese (Romano, Mozzarella, Asiago or Fontina)
1/3 cup grated fresh parmesan cheese
1 tablespoon dried Italian seasoning

Instructions
- Bring a large pot of water to a boil, salt it, cook the pasta according to the directions for use, al dente. Drain the pasta once cooked and set aside. Work on the next step while cooking your pasta.
- Meanwhile, in medium saucepan over medium heat, melt butter, add flour and seasoning to Italian and whisk for about 2 minutes to cook "flour-y" flavor. Add the milk and continue whisking occasionally, letting the mixture thicken. Add cheese and whisk until completely combined.
- Pour the cheese sauce over the pasta and then mix them. The sauce will thicken when seated.
