Ingredients
- 1 kg of new potatoes (such as Jersey Royal or another waxy variety), quartered
- 250 g of asparagus tips, cut into 2-inch pieces or cut in half
- 2 tbsp. Soup of olive oil infused with garlic
- 4 c. Balsamic vinegar
- A pinch of salt and pepper
- Preheat the oven to 200C / 390F.
- In a large roasting dish, add olive oil, balsamic vinegar and salt. Add the potatoes and mix to coat well before roasting for 20 minutes.
- After 20 minutes, add the asparagus with a little extra olive oil, if necessary. Mix to coat and cook another 15 minutes.
- Season with extra balsamic vinegar, salt and pepper.
